Coffee Glazed Bacon and Scallop Skewers

Preparation time: 10 min. – Cooking time: 5 min – Portions: 4


  • 2 lb scallops, cleaned and patted dry
  • 8 slices of bacon, cut in thirds
  • 2 Tbsp strong brewed coffee
  • 1 Tbsp maple syrup
  • salt and pepper

If using wooden skewers, soak for 1hr. before using. Preheat grill to med-high heat. Salt and pepper scallops. Combine coffee and syrup and brush each piece of bacon on both sides. Wrap one piece of bacon around each scallop and secure on skewers(2-3 per skewer). Grill for about 5 minutes, turning once until scallops are done and bacon is starting to crisp. Could also prepare on the stove on broil.
